Denmark – The Future of Foodservice to 2020

Summary

Denmark currently finds itself deep into a period of economic recovery; it still suffers from stubbornly low inflation which caused the country to fall into a period of deflation in 2015. Unemployment however remains relatively low in comparison to other Scandinavian and European Union (EU) member states. The financial crisis of 2008 as well as subsequent recessions in 2011 and 2012 had created a ‘stop-start’ economy, unable to build significant momentum and creating uncertainty among consumers.

Denmark’s Full Service Restaurants (FSR) channel leads the profit sector, valued at DKK 23.2 Billion (USD$ 3.5 Billion) and accounting for 32.4% of profit sector revenue. This is primarily attributed to widely held traditional eating habits among consumers as well as a continuously aging population. Valued at DKK 71.7 Billion (USD$ 10.7 Billion) in 2015, Denmark’s profit sector represents the 2nd largest Scandinavian market and the 14th largest EU market. Between 2013 and 2015, overall sales value grew at a strong CAGR of 3.1%, however this is forecast to decelerate to 2.8% over the next five years.

Denmark’s Quick Service Restaurants (QSR) market has experienced the fastest value growth over recent years, with a CAGR of 3.6%. Over the next five years value growth is expected to slow, with a forecast CAGR of 3.0% between 2015 and 2020. A recent period of premiumization is the most notable trend across the channel, facilitated by the introduction of various gourmet burger brands (Juicy Burger, Halifax and Cock’s & Cows). The popularity of these brands has caught the attention of long-standing QSR operators, who have been quick to introduce higher quality offerings of their own.

Scope

– Danish consumers maintain a lowered tendency to eat outside the home, a characteristic shared by other Scandinavian and Nordic markets.
– The Danish QSR market has undergone a period of evolution, and premiumization is a notable trend among both new entrants and long-standing incumbent operators. Subsequent menu changes have created brand positioning issues among operators that had historically built their success through indulgence-led fast food.
– The general high cost of eating out has cemented the need for saver-menus among operators in order to attract younger urbanites.
